Chicken Broccoli Alfredo Zoodles Recipe
Ingredients
- 1 1/2 cups broccoli florets
- 1 tablespoon butter
- 1 pound boneless chicken thighs (chopped)
- 1 small yellow onion (diced)
- 2 cloves minced garlic
- 1 cup chopped spinach
- 1/2 cup heavy cream
- salt and pepper
- 3 large zucchini (spiralized or peeled into noodles)

- Fill a saucepan with 1 inch of water then add a steamer insert.
- Add the broccoli to the insert then cover and bring the water to boil.
- Steam the broccoli for 6 to 8 minutes until bright green then drain and set aside.
- Melt the butter in a large frying pan over medium-high heat then add the chicken.
- Cook for 3 to 4 minutes, stirring often until the chicken starts to brown then add the onion and garlic.
- Sauté for another 2 to 3 minutes then stir in the spinach and broccoli.
- Pour in the cream then season with salt and pepper and stir well.
- Cook for 5 minutes until everything is cooked through then spoon into a serving bowl.
- While the mixture is cooking, heat another large skillet over medium heat and grease with cooking spray.
- Add the zucchini noodles and sauté for 4 to 5 minutes until just tender.
- Spoon the chicken broccoli alfredo over the zucchini noodles to serve.
